A recurring theme has developed in the answers given by our monthly Bartenders of the Month. It seems mixologists really do not like patrons to snap their fingers or whistle at them. But then, who does?

While we’re on the subject, don’t yell, “Hey!” at your server either. The bartender, who is always multi-tasking, knows you are there, so be patient. A good standard is to always put yourself in their shoes.

Although every day is tourist season on Galveston Island, now that summer is over, the busiest part of tourism is slowing down and the crowds have thinned out. Fall is an excellent time to take the drive down I-45 South and enjoy a good meal and strong drinks.

Stop into Island Time where you can sit and enjoy the beautiful Gulf while sipping on a refreshing, signature cocktail from Joshua. But refrain from snapping your fingers, whistling, or yelling, “Hey!” at him.

The Montrose Star Bartender of the Month is Joshua Mills.

Name: Joshua Mills

Where is your hometown?
Texas City, Texas — born, raised and proudly seasoned with Gulf Coast charm.

Single, married, or I like to keep ’em guessing?
I have a wonderful partner of five years.

Tell us about your experience bartending.
I’ve been in the industry for 16 years. I jumped in right out of high school and never looked back. My first steps were in the restaurant world here on the island, then in 2011 I slid into the fabulous world of gay bars at Third Coast downtown.
Soon after, I helped open Splash Bar Galveston at 3102 Seawall, and — plot twist — I never left. The name above the door may have changed more times than a drag queen’s dress but I’m still behind the bar, smiling through it all.
It’s a community joke now that “Josh just comes with the building!”
I started at the bottom, learned the ropes and now I’m proud to say I run the place as manager.

What is your drink specialty?
Oh, just the entire cocktail menu at Island Time. Every drink on that list is my own creation — think fruity, beachy, colorful concoctions that’ll make you feel like you’re on vacation even if it’s Tuesday. So yeah, the whole menu is my specialty!

What is your philosophy on being a good bartender?
Customer service. Plain and simple. Yes, it’s cliché, but it’s the truth. My goal is to make people feel welcome, happy, and like they’re part of something fun and inclusive. A strong cocktail helps, but a warm smile and good vibes — that’s the magic. #APlaceForAll

Besides the money, what do you enjoy about being a bartender?
Everything. Seriously. I’ve left the industry a couple times, but nothing else compares. There’s just something about mixing drinks, laughing with strangers and throwing a little sass behind the bar that fills my soul. It’s my happy place.

If someone wants to order a drink to impress a date, what drink do you recommend, and why?
Here’s my take: Skip the pressure. Order what you like. Be real. If you want a shot of Rumple, own it. If your date runs away because of your drink choice, well, they weren’t ready for this level of fabulous anyway.

What is a pet peeve about being a bartender?
Where do I begin?! But if were being honest, one thing that drives me up the wall is when people snap or whistle at the bar. I’m a bartender, not a dog trainer. Use your words.

What is the craziest thing you’ve ever seen from behind the bar?
One night, while escorting a guest out, the poor guy got so scared sh*tless, he literally lost control of his bowels. On my shoes. I cleaned up, changed into a backup pair (thanks to a friend with emergency footwear), and got back to work. Business was booming, and so was the bleach.

If you were not a bartender, what would you be doing?
Hopefully, something still in the hospitality world — maybe managing or consulting. But if we’re dreaming big? I’m sipping cocktails, barefoot, retired in Hawaii.

Now that the Island’s busy season is over, how do you plan to stay afloat (no pun intended)?
Grab a life vest, floaters! (Big Brother reference lol). Thankfully, the community we’ve built here keeps us going year-round. Locals don’t just show up — they show love. These aren’t just customers, they’re friends who’ve made this bar their second home.

Football season has just begun. Are you a fan? Do you have a favorite college or NFL team that you follow?
“Yay, feetball!” That’s my official response to any sports talk. I’ll cheer if there’s a party — or queso.

What do you do for fun? Any hobbies?
I’m a homebody at heart. I love lounging with my two fur babies, Carter and Mazie. Nothing beats a lazy night with dog cuddles and maybe a good playlist or a terrible reality show.

Who is your favorite musical artist and what is on your current playlist?
I’m all over the place with music — I love it all. But lately, I’ve been obsessed with mashups. Why choose one banger when you can have two?

You can find me at Island Time Beach Bar and Grill, at 3102 Seawall Blvd. in Galveston, Thursday through Saturday nights, Sundays at noon for Drag Queen Bingo at 5 p.m. — it’s my favorite shift of the week. Glitter, sass and strong pours? You don’t want to miss it!
