One of the first articles I wrote for the Star was on potatoes.
We decided to visit this subject again because potatoes are really a superfood and nutrient dense, and plays an important role in one’s diet.
Potatoes are extremely nutritious, containing more potassium than bananas. They are rich in vitamin C, an antioxidant, and vitamin B6, which helps with brain function¹.
One of the best things about potatoes is that they are a great source of fiber, which helps to keep you feeling full and satisfied longer, providing your body with a steady source of sustainable energy.
Potatoes are naturally low in fat when topped with simple salt and pepper. There are so many things you can put on a potato besides sour cream and butter.
Potatoes have always been a popular staple, and scientists and foodies today are becoming increasingly interested in them.
Even tighter budgets can usually afford potatoes.

Spiral Potatoes
Bake for 40 minutes at 425 degrees until crispy on the outside

You can put any type of spice or herb on these potatoes. And
because of the potatoes’ health benefits, I recommend using slight amounts of olive oil or butter just to coat the potatoes to give the
skin a nice brown color and crunch.
