Planning a trip to Galveston for Mardi Gras? The celebrations start early this year, February 6, and runs through February 17. Over that course of time, nearly thirty parades will roll down the historic streets of the island city, approximately three million beads will be tossed, and a few cookies, as well. Drinking is as much a part of Mardi Gras as overloading one’s neck with one hundred pounds of beads.
One of the best places to have a cocktail, or three or four, is Island Time Beach Bar and Grill, where day drinking isn’t just for tourists and retirees. Ready at the bar during the third largest Mardi Gras in the country is Chelsie Huffmeister, who’ll be happy to serve you her specialty, Liquid Marijuana.

Chelsie Lynn Huffmeister

Where is your hometown? How long have you been in Galveston?
Cypress, Texas is my hometown and I’m the only Huffmeister to not graduate from Cy-Fair High School. Kinda the black sheep of the family. I’ve been in Galveston for 10 years roughly.

Single, married, or I like to keep ’em guessing?
I’m thirty-four, not married, no kids but in a relationship.

Tell us about your experience bartending.
I’ve been in the service industry for 15+ years including management. Bartending is easy and so natural for me. Make great money also. But there is never a dull moment while bartending, which keeps it fun. You never know who is going to walk through your doors.

Do you have a drink specialty?
Liquid Marijuana shot is my specialty. All the ingredients and taste!😋

What is your philosophy on being a good bartender?
Being a people person, you have to be able to multitask and understand your customers. But your personality is what shines and always brings people back in to see me.

Besides the money, what do you enjoy about being a bartender?
I run the show. Behind the bar I am the boss!

What is your pet peeve about being a bartender?
The lack of respect from people who treat you like you are less than cause you serve someone. Having to put up with people’s attitudes is a pain when they are a grown adult.

What’s the best and worst things about being a bartender in a tourist city?
Galveston can be fun, crazy and exciting but people that come here for a good time do not tip accordingly. Most people pay exact amount. We rely on tips!

What is the craziest thing you’ve ever seen from behind the bar?
I’ve seen fights; I’ve seen seizures; I’ve seen arrests. It’s never a dull moment! No shift is the same.

If you were not a bartender, what would you be doing or what did you do before?
I worked in an office setting before bartending and all I wanted to do was escape the office. Just wasn’t for me.

Tell us something people do not know about you and will be surprised to learn.
I was born 7 lbs. 11 oz. My first name has seven letters, and my last name has eleven letters. My lucky numbers! I’ve always been told I need to play the lotto with them. I’m also an only child. I’m also a natural blonde with blue eyes and both my parents have brown hair. I’m an original!

Are you on social media?
Yes! Trying to be a famous, or well-known content creator.

Where and when can we catch you for a drink?
I bartend at Island Time weekdays, 12-7 pm, except Sundays and Wednesdays. Sunday nights, I bartend at Huli Huli Hut from 3:30 p.m. till closing time. Best crawfish on the island!
