Survival of the fittest

I am not a survivalist. Well, not the type that hates the government and lives hidden from civilization with a years’ worth of food and a house full of guns.

To be honest, I am a bit of a hurricane survivalist. After Rita, and only having six bottles of water, one flashlight, flashlight batteries and three cans of beans, I decided I would stock up. I saw the grocery stores being decimated and I knew that I would never fight with someone over a can of tuna. I bought what I needed and replaced things as I used them.

When Covid-19 knocked on our doors, I went to my HEB and walked past the paper aisle and saw two young men guarding the toilet paper. It was quite the sight, and again, Costco helped me stock up. Trees fell with Ike and Beryl, but I could have outfitted the neighborhood with paper towels. I never want to be one of the herds that frantically tries to buy out the market.

We find ourselves in an odd position with what is happening in Iran and the Strait of Hormuz. There is a real possibility that we will see shortages of some kind again. The following are foods that many don’t think about. Asian markets are the best source for these items.

Bouillon cubes: Dehydrated broth or stock. Adds great flavor to plain pasta or rice.

Nutritional yeast: It’s not the type used for breadmaking. It has a cheesy and nutty flavor and is fortified with vitamin B12. Use as a cheese substitute.

Dried seaweed: Contains iodine and is your thyroid’s best friend, with high amounts of fiber, can be eaten as a snack or with rice, meat or in soup.

Canned coconut milk: Best to use the full fat variety. It is dairy free and slightly sweet and upgrades almost anything you use it in. This can be kept in your pantry up to five years.

Chia seeds: Filled with Omega 3’s, protein and antioxidants. Sprinkle on your cereal, put them in protein drinks or make pudding. They are extremely versatile.

Ghee: Clarified butter used in Indian and Middle Eastern dishes. Great for people who are lactose intolerant.

Quality instant noodles: These are best if bought in an Asian store. They are more flavorful than the regular ramen bought in grocery stores.

Spicy instant noodles / MBRAMO

Textured vegetable protein: Can be used as a meat substitute. It is a shelf stable product that absorbs the seasonings and sauces you cook with.

Powdered milk: High in protein and calcium. It is milk that has been evaporated to a powdered state and has all the benefits of cooking and baking with dairy.

This will sustain you and can be stored easily for long periods of time.

You may want to have food that will last for long periods of time. Remember, if a storm hits and we are without power, find someone with a gas stove or a generator or a barbecue. But if we start to find that goods are not reaching our shelves because of a war we might be involved in, there are great, healthy alternatives.
