Does a tourist town with over eight million visitors a year have a slow season? For Galveston, the answer is definitely a “yes.” While May through September finds the island hopping, with out-of-towners spending money and filling the restaurants and bars, the off season can be challenging for those in the service industry.
Waiters and bartenders have found it important to build a local clientele by creating regulars that keep coming back long after the tourists have crossed the causeway on their way back home.
Sherry Boyett tends bar at 23rd Street Station, the only piano bar on the island. Even on slow nights in the off season, the regulars flow in to be greeted with Sherry’s warm “hello” and are made to feel welcome.

Beside 23rd Station, what are some other places you have worked?
Island Time Beach Bar and Grill, The Poop Deck and Sweet Home Alabama.
What is your drink specialty?
My specialty is when someone comes up but doesn’t exactly know what they want. I ask a few questions like flavor profile. I create something to their specific taste.
What is your philosophy on being a good bartender?
A good bartender constantly scans the room, knowing everything that is happening. Conversing with each person, making sure they feel welcome, safe, and appreciated. A good bartender can be considered to be a friend, psychologist and a confidant.
Besides the money, what do you enjoy about being a bartender?
I love to create a beautiful new cocktail that you can’t get anywhere else. Seeing the surprise look on a customer’s face after the first taste is what keeps me motivated.
What is a pet peeve about being a bartender?
When a person expects a double for the price of a single. People don’t seem to understand when a bartender goes along with those things, they are stealing from the bar owner and they are putting their jobs in jeopardy.
What is the craziest thing you’ve ever seen from behind the bar?
Like an episode from the Texas Chainsaw Massacre, I had a customer pull a chainsaw
out of the trunk of his car and threaten the entire bar staff. Thankfully, it was an amazing bar staff who were able to tackle him before anyone was seriously injured. I lived in Arlington, Texas at the time.
Bartending in Galveston can present a special set of challenges. How do you cope with all the special events, slow seasons and tourists?
All the special events get us through the slow season. Tourism during the summer brings in completely new customers. Hopefully, they will keep coming back when they’re on the island. The locals, however, do more for us than anyone. We depend on the people who live in Galveston all year. When you treat the locals right, they will take care of you.
What do you do for fun? Any hobbies?
We just bought a new house and are still working on fixing it up the way we like. Working in the yard and grilling, spending time with my grandbaby and family are the most precious thing to me.
Who is on your current playlist?
I have an eclectic taste in music although country music is where my heart is. Now if somebody wants to shoot me some rodeo tickets I would not object. Lol.
